Abstract
<jats:p>The article determines that the conditions of the modern turbulent environment are particularly sensitive to the hotel and restaurant business enterprises, whose activities depend not only on the socio-economic situation, the level of business activity of the population and global crisis phenomena, but are also determined by the high elasticity of demand, the impossibility of deferred consumption, as well as critical dependence on consumer sentiment, population mobility and tourist flows. Such factors necessitate a comprehensive disclosure of the features of the organization of the activities of hotel and restaurant business enterprises from the standpoint of a systemic approach. During the study, hotel and restaurant businesses were defined as service sector entities whose activities are related to the provision of a range of services related to temporary accommodation and catering in order to meet consumer needs and generate profit. Based on the involvement of a systemic approach to the nature of the characteristics of hotel and restaurant businesses, the following were attributed: interaction with the external environment, the presence of internal interconnected elements, orientation towards increasing profitability, competitiveness and ensuring high quality of service, and the ability to adapt and self-develop. A general scheme of organization of the hotel and restaurant business enterprise as an open socio-economic system is proposed, the central element of which is the management subsystem. The internal structure is formed by the operational and resource-supplying subsystems. The interaction of the hotel and restaurant business enterprises with the external environment is implemented through a system of external relations, which involves establishing relations with resource suppliers, consumers, partners, competitors, and state regulatory authorities. A special role among the above interaction participants is played by consumers, who perform not only a consumer but also a regulatory function, forming the prerequisites for the effective development and improvement of the enterprise's activities.</jats:p>
