Abstract

<jats:p>The Ministry of Defence has a duty of care to supply all trainees and serving members of the Armed Forces with appropriate nutrition to support their health and performance. Defence Support, part of UK Strategic Command, is responsible for catering policy and food supply worldwide. The Defence Catering Manual Joint Service Publication 456 covers all aspects of food provision. It provides regulations, instructions and guidance for those working in catering for the UK Armed Forces. Key areas covered include: food service management, nutrition guidelines for caterers, menu planning, accounting regulations and funding, and food safety management. Prisons provide all food and drink, apart from some snacks and soft drinks, consumed by prisoners. Offenders are drawn from a population with significantly raised risk of developing a range of non‐communicable diseases. The British Medical Association provides guidance on the medical care for prisoners that dietitians may find useful.</jats:p>
